Squash seed processing

Squash seed is really easy to process. In this example we are processing courgette seed but the principles are exactly the same for all kinds of squashes and pumpkins.

1. Cut ends off

2. Cut down each side with a craft knife, taking care not to go too deep and damage the seeds

3. Rip open the fruit, trying to keep both sides intact

4. Use an ice-cream scoop to scoop out the seeds and pulp into a bucket

5. Leave to soak / ferment for 1-2 days, this will break down some of the pulp and make the seeds sink to the bottom of the barrel

6. Add water and then use a paint mixer to whizz up the mixture – this will break up the pulp further

7. Leave to settle for a few moments and then pour off most of the liquid – the seeds should be at the bottom. Add more water and repeat until the water looks clear

8. Pour the seeds into a sieve to drain off water

9. Spread the seeds out to dry on a sheet, in a layer one seed thick, in a warm and airy place

And thats it! Once the seeds are dry, store them in paper bags in a cool an dry place.
