An Italian heirloom herb with succulent, aromatic leaves and delicate edible white/pink campion-like flowers. Also known as Sculpit or Bladder Campion, its leaves have a complex flavour profile, combining notes of tarragon, chicory and rocket. Delicious eaten raw in salads or cooked into risottos, soups and omelettes, it’s also a pretty addition to the flower garden. While the plant remains edible when in flower, the leaves of older plants become stronger and more bitter – for the best flavour, harvest when the leaves in spring when young and succulent.
